Protein Pasta Salad
Ingredients:
2 cups protein pasta (your choice)1 cup broccoli, chopped1/2 cup chickpeas, drained & rinsed1/2 bell pepper, diced (any color)1/2 cup cherry tomatoes, halved1/4 cup feta cheese, crumbled1/3 cup Italian dressing
Instructions:
1. Cook the protein pasta according to package instructions. Drain and let cool.
2. While the pasta cooks, steam the broccoli for about 2 minutes (or leave it raw for extra crunch).
3. In a large bowl, toss together the pasta, broccoli, chickpeas, bell peppers, cherry tomatoes, and feta cheese.
4. Drizzle with Italian dressing and mix well.
5. Serve immediately or chill in the fridge for 30 minutes to let the flavors blend.
